Protein Packed Egg Bake

This low-carb, keto-friendly egg bake is very versatile and can be eaten for breakfast, lunch, dinner or used as a side dish. I love how easy it is to adapt this recipe and enjoy creating with different veggies and protein.


Ingredients

4 eggs

1 cup cottage cheese

Salt

Pepper

2 cups of veggies/meat

1/2 cup shredded cheese (optional)


Veggies/protein options: diced veggies (zucchini, tomato, mushroom, peppers, onions, broccoli) protein (bacon, ham, sausage)


Instructions

  1. Preheat oven to 375 F degrees and lightly grease a 2 quart casserole dish

  2. Whisk 4 eggs and cottage cheese and pour into greased casserole dish

  3. Mix in 2 cups of veggies and/or protein (optional if using as a main dish)

  4. Sprinkle the top with preferred shredded cheese (mozzarella, parmesan, cheddar)

  5. Baked for 40 - 50 minutes until cooked through and golden brown


Pictured: Zucchini and tomato egg bake topped with shredded mozzarella. Perfect alone or as a side dish paired with grilled chicken or steak.
