"Delicious and Easy Pork Tenderloin with Garlic Herb Butter: Perfect for Busy Weeknights!"

This recipe is low-carb and keto friendly paired with steamed veggies or side salad.


Ingredients

  • 2 pound pork tenderloin (I prefer smaller tenderloin and use 2 - one pound loins)

  • 1 tablespoon minced Italian herbs (a blend of rosemary, thyme, and sage)

  • 4 cloves minced garlic

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • 3 tablespoons avocado oil


Garlic Butter

  • ¼ cup melted unsalted butter

  • ¼ teaspoon garlic salt

  • ½ teaspoon onion powder

  • 1 tablespoon chopped fresh parsley


Instructions


Season the pork tenderloins

  • Using a fork, poke holes all over the pork tenderloin.

  • Stuff the holes with the minced garlic and herbs.

  • Season the tenderloin with sea salt and black pepper.

Cook the pork tenderloins

  • Preheat oven to 425°F.

  • Heat the avocado in a 10" or larger oven-proof skillet over medium-high heat.

  • Sear the pork for 3 minutes per side until browned.

  • Transfer the oven-proof skillet to the oven and bake pork for 20-25 minutes or until a thermometer inserted into the thickest part reads 145°F (If you do not ave an oven-proof skillet, transfer pork to a baking dish).

  • Remove the pork from oven and let rest as you prepare the garlic butter.

  • Make the garlic butter by simply mixing the ingredients in a small bowl.

  • Slice the pork into 1" slices and drizzle with garlic butter and serve.
