Tomato Feta Bake

This TikTok viral recipe has become a family favorite. Quick and easy weeknight dinner with your pasta substitute of choice. For a higher protein option add in some shredded chicken or serve as a side dish with your favorite grilled protein.


Ingredients


  • 2 pints (4 cups) cherry/grape tomatoes

  • 8-ounce block of feta cheese, drained

  • 2 tablespoons extra virgin olive oil

  • 1 teaspoon oregano

  • 1/4 teaspoon thyme

  • 1/4 teaspoon red pepper flakes (optional)

  • salt and pepper to taste

  • 3 cloves garlic, minced/grated

  • 1/4 cup fresh basil leaves, thinly sliced (optional)

  • Zoodles, or pasta substitute of choice


Optional add-ins: spinach, olives, shredded chicken



Instructions - Preheat oven to 400 degrees

  1. Place the tomatoes and feta in a single layer in a baking dish, drizzle on the olive oil, and sprinkle on the oregano, thyme, red pepper flakes, garlic, salt and pepper to taste.

  2. Bake in a preheated 400F oven until the tomatoes are blistered and the feta is golden brown and soft on the inside, about 35 minutes.

  3. Meanwhile, prepare zoodles or pasta substitutes. Many stores have packages of spiral veggie noodles or make your own.

  4. Add the basil to the pan with the tomatoes and feta and mix everything into a nice creamy sauce, before mixing in the pasta substitute. Mix in any optional add-ins and serve immediately.



Pasta options:

  • Zoodles

  • Spaghetti squash

  • Palmini noodles

  • Not worried about carbs - any pasta of choice


Make into a dip: Leave out the pasta and serve warm with your favorite crackers (low-carb options available) or veggies (peppers, cucumbers, celery )
