Florentine Soup

Quick and easy for a busy weeknight or make ahead and freeze to reheat for the perfect lunch.

Prep time - 10 minutes

Cook time - 8 minutes


Ingredients

1/4 cup butter

4 cups baby spinach, chopped

1 teaspoon minced garlic

8 ounces cream cheese

1/4 cup shredded Asiago cheese

4 cups chicken broth

1/4 teaspoon ground pepper

1/8 teaspoon ground nutmeg

3 cups shredded cooked chicken (make ahead or buy a ready cooked rotisserie chicken)



Instructions

  1. In large sauce pan melt butter over medium heat. Add garlic and chopped spinach and cook for 3 minutes or until spinach is wilted.

  2. Add cream cheese and shredded Asiago and cook for 2 minutes while stirring until melted.

  3. Add in chicken broth and shredded chicken; season with pepper and nutmeg and cook, stirring occasionally for 5 minutes or until heated through (do not boil).




This soup is very versatile. Add in chopped bacon, mushrooms or tomatoes. Substitute chicken for ground sausage, ground turkey or other meat alternative.
