Keto/Low Carb Chocolate Dipped Peanut Butter Cookies

These cookies are absolutely delicious! Thank you to my friend Lori Hart for sharing this incredible recipe.

Ingredients
• 1 cup all-natural peanut butter
• 1 egg
• 2/3 cup keto-friendly sweetener (I prefer brown or golden monk fruit)
• 1/2 cup Lily’s or Bake believe chocolate chips (for dipping)
• 1/4 cup crushed nuts (for dipping)
(pecans, walnuts, or almonds)
Instructions
1. Preheat your oven to 350°F
2. Combine the peanut butter, egg, and sweetener until well mixed in a medium-sized mixing bowl.
3. Roll the dough into 12-14 equal-sized balls and place on a parchment paper-lined baking sheet or silicone baking mat.
4. Flatten each ball with a fork making a criss cross pattern,
5. Bake for 10-12 minutes, or until the edges are golden brown. Allow the cookies to cool completely.
6. Allow the cookies to cool completely before completing steps 5-7.
7. In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring between each, until smooth.
8. Dip half of each cookie into the melted chocolate, then dip into the crushed nuts. Place the cookies back on the parchment paper.
10. Allow the chocolate to harden before serving. I placed them in the freezer for 15 minutes.
Store cookies in an airtight container in the refrigerator or freezer.
